I love sweet potatoes. They are one of my favorite foods (and go-to carb ha). Once you roast one, you will never be able to eat a microwaved potato in your life. Same with popcorn (try the stovetop!). So that’s what I do…I’ll wash, scrub, and poke holes in several at a time, bake in the oven at 400 degrees for about an hour, depending on size. And ta-da! Ooey sweet goodness. Slice in half, length-wise and smash flat with a fork. Then the toppings 🙂 I’ve tried many different combos, here are some of my favorites:
- The classic: coconut oil, cinnamon and pink salt
- The breakfast: almond butter, maple syrup and pink salt (you’re probably catching on to a theme here 😉 )
- The savory: tahini, hemp seeds, pink salt
- The complete: avocado, over-easy egg, pink salt
