Power Pudding

I crafted a bowl of chia pudding this morning that was so delicious and nutritious, I have to share 🙂 It’s super quick, easy, and the perfect well-rounded breakfast to start your day! Also, being gluten/grain-free, dairy-free and soy-free, it’s highly anti-inflammatory ?

To make, soak the following overnight:

  • 3T chia seeds (I used Bob’s Red Mill)
  • 1c unsweetened vanilla almond milk (I used Califia Farms)
  • Dash of vanilla and cinnamon to taste

Then mix in:

  • 2T Collagen Hydrosolate (Great Lakes Gelatin brand is my preferred – it’s a great source of protein, amino acids and overall nutritional support!)
  • Pink Himalayan salt (my favorite ha)

And top with:

  • 1/4c organic blueberries
  • 1T almond butter 
  • 1T unsweetened coconut flakes


For the nutrition-curious, it breaks down as such:

  • 26g protein 
  • 26g carbs (20g fiber / 5g sugar)
  • 28g fat (healthy fats! I eat a lot of these)
  • 417 cal
